Overview:
The program leading to the BS in Human Environmental Science offers designated emphasis areas in medical dietetics, nutrition and fitness, and nutritional sciences. A minor is also available in nutritional sciences.
Training in Dietetics prepares students to provide advice on food selection relative to lifestyle; to provide nutritional care as counselors, educators and managers; and to manage food production and service in group facilities.
Nutrition and Fitness prepares students for careers in the wellness field. The expansion of interest in this field has provided a need for counselors, educators and trainers for programs aimed at children, adults and elders.
Nutritional Sciences involves the study of the utilization of food by humans for growth and metabolism, in both normal and disease states. The field of nutritional sciences requires a strong background in biology, chemistry, physiology and biochemistry to allow understanding of the mechanisms through which dietary factors are metabolized. Students majoring in Nutritional Sciences will be well prepared for health-related careers in medicine, nursing and nutrition, as well as for graduate study in nutritional sciences.
